Tell us a little bit about your niche topic.
I’ve always been interested in health and fitness and have been in a constant search for alternative methods to improve my health. I’ve tried every diet you can think of until I discovered that simply eliminating wheat from my diet was the answer to my search. Becoming completely gluten free and almost grain free has totally improved my health, energy and weight. It is a lifestyle I can live with forever and I have been sharing my experiences with the change through a journal here on Squidoo. I also have recipes I have shared and plan on reviewing cookbooks that are gluten free as well as present links to research article I find of value.
Tell us about the moment you fell in love with your topic. Was it an immediate thing or did it happen over time?
January 7, 2013 was the day I started going completely wheat free and mostly grain free. I had decided to give it a try for 30 days, but within 2 days I started feeling wonderful changes that encouraged me to go on. At the end of a month, I was feeling so great, I decided to go for another month. When I had blood work done six weeks after starting, there were such massive improvements in inflammatory levels, and moderate improvements in sugar, cholesterol, and triglycerides that even the doctor was amazed. Today I continue with no plans on ever going back to wheat. I make great recipes, play tennis 4 times a week, started singing with a large chorus after not being able to sing for four years because of inflammation of the vocal chords. I am finally listening to what my body has been trying to tell me for years.
Who had the most influence in your life?
Dr. William Davis, author of the “Wheat Belly Cookbook,” has been my guide through this wonderful lifestyle change. I thank him every day and hope I can share what I have found with others so he can help them, also.
